are vegetarians and anything besides what is healthy for the animal

Meat from grass-fed animals can have as much as one-third less
fat when compared to a similar cut from a grain-fed animal.

 Our beef is processed at a
small family owned processing plant and we can Guarantee you
that every beef you purchase from us is
indeed, “individually”, USDA INSPECTED, while the
large packing houses cannot make such a guarantee. |
Mountain pastures. We believe we live in the best grass-fed beef
producing area in the country. The San Luis Valley, high altitude
and cold summer nights and high soil mineral levels of our mountain
pastures grow grass like nowhere else, and result in a uniquely
flavorful beef.

 Careful husbandry. Our cattle are healthy. We will sell you no
beef that has been treated by any chemical of any kind, including,
but not limited to, antibiotics, hormone growth promotants, or
pour-on insecticides. The occasional animal that requires any medical
treatment is pulled from our program and sold on another market. |
Dry-aged. Our beef is hung and dry aged for 14 to
21 days, the old way. Almost any chef will tell you that if you
want a good steak it needs to be dry-aged. This process gives the
meat a delicious flavor rich in juices, and a texture and tenderness
not found in meat aged by other methods, and especially compared
with those that have not been aged at all. After the aging process
is completed the meat is cut and processed by professionals, then
vacuum sealed in clear kryovac packaging to ensure lasting flavor
and freshness.

We feed our cattle nothing but green grass and grass/alfalfa
hay. Our cattle never see a feedlot. We are truly 100% grass-fed and
grass-finished providing you with the health benefits documented from
grass fed beef.
REGULAR PRICE LIST
Quarters - $4.50 per pound, calculated on actual
packaged weight, approximately $450.00. This package contains a
mixed quarter
with premium cuts from the entire beef, about 100 pounds. It includes:
Filets Mignon, New York’s, Rib Eye, Sirloin Steaks, Round
Steaks, Rump Roasts, Chuck Roasts, Flank Steak, Skirt Steak, Stew
Meat, Brisket, Ground Beef, Short Ribs, (Organ Meats and Soup Bones
if requested). It contains approximately 100 pounds of meat. All
cuts are vacuum packed.
Halves - $4.25 per pound, calculated on actual
packaged weight, approximately $850.00. This package contains about
200 pounds of
premium cuts from the entire side of beef. It includes: Filets Mignon,
New York’s, Rib Eye, Sirloin Steaks, Round Steaks, Rump Roasts,
Chuck Roasts, Flank Steak, Skirt Steak, Stew Meat, Brisket, Ground
Beef, Short Ribs, (Organ Meats and Soup Bones if requested). All
cuts are vacuum packed.
Wholes - $4.00 per pound, calculated on actual
packaged weight, approximately $1600.00. Approximately 400 pounds,
it includes: Filets
Mignon, New York’s, Rib Eye, Sirloin Steaks, Round Steaks,
Rump Roasts, Chuck Roasts, Flank Steak, Skirt Steak, Stew Meat,
Brisket, Ground Beef,
Short Ribs, (Organ Meats and Soup Bones if
requested). All cuts are vacuum packed.
Most the time, a quarter beef weight is more than 100 pounds, in
which you will be charged $4.25 per pound over the 100 pound’s.
You are not committed to take over the amount designated. NOTE:
